Made with a combination of cow and goat milks, this aged cheddar showcases the best of both worlds. Its creamy, tangy, nutty flavors complement the caramel and grassy notes that come with the addition of goat’s milk to the blend. With several years’ aging, this cheese exhibits a distinctive sharpness and crumbly, crystalline texture. A Rogue Creamery team favorite!

Appearance: Pale yellow white

Texture: This cheese crumbles easily due to its extended aging, and is one of our drier-style cheddars. It maintains a delightfully creamy texture on the palate.

Taste: Creamy and nutty, this cheese has the distinctive “bite” and crunch of a sharp cheddar.

Suggested Pairings:

  • Mt. Mazama shines on a cheese plate along with a berry or stone fruit compote, roasted nuts, and rustic bread.  It also makes an outstanding burger!
  • We enjoy this versatile cheese with a variety of ales and porters. It also pairs well with unoaked Chardonnay, or an earthy, old-world Pinot Noir or Syrah.
